Serving & storage
Keep the tin sealed in the coldest part of your refrigerator, ideally 28–32°F. Never freeze it.
Open about 10 minutes before serving and present the tin on crushed ice. Use a mother-of-pearl, bone or glass spoon. Metal can affect the flavor.
Once opened, press plastic wrap onto the surface, reseal and enjoy within 2–3 days.
Shipping
Every tin is packed to order and ships overnight at no charge, in an insulated box with cold packs so it arrives chilled.
In San Francisco, on-demand Uber delivery can bring your order to your door in as little as 15 minutes.
Please refrigerate as soon as it arrives.
Pairing
Serve on warm blini with a little crème fraîche, or simply from the back of the hand. Keep garnishes minimal so the caviar leads.
Pour Champagne or a dry sparkling wine, or ice-cold vodka for a classic service.
